The transformation to is always one of the most important parts in werewolf movies, but rarely are there ever transformations from; they usually just wake up naked in a tree or transform off-screen/between cuts. The only examples I can think of off the top of my head are Van Helsing and maybe a few Paul Neschy movies. There was also the last few seconds of one at the beginning of Underworld, but that doesn't really count. What are some good examples of films with a reverse transformation?

"House of Frankenstein" has a cool one. most of the Wolf-Man pictures have transformations in reverse which are important to the story because at the end of every movie "Larry von Wolfenmeister finally gets his final peace (again)". But as always, Good old wolfboy returns, and in "House of Dracula" we see him transform into a hairy...thing...again. And it also features a cool reverse where he strangles Doctor Edelman and returns to normal again.
etc etc etc etc etc...

Fright Night (the first one) had a vampire that turned into a werewolf-type creature. There was a reverse transformation when he got killed. transform.to/~werekatt/movies/fright/fright.htmThere's a good one at the end of "Silver Bullet," and also one in "Lone Wolf" (if I remember correctly).

"Romasanta" had a very interesting reverse transformation. And no forwards transformation as I recall.

The highlights for me in both Romasanta and Silver Bullet were the reverse transformations. And that one in Fright Night was very cool, even if Ed wasn't really a werewolf.

Ah! Wasn't there a CG reverse transformation in the Brothers Grimm as well? Maybe it isn't that rare after all ...

most flicks in which the wolf also has a hero/victim role feature one because of the "aww he didn't mean to" effect of a reverse transformation

I agree, I think reverse transformations work best for 'reluctant werewolves'; while the transformation scene is great for a scary, this-guy-is-changing-into-a-monster effect, the reverse transformation is good for evoking sympathy as you are watching a monster reverting to a (usually) innocent and (often) dead human.
